PURE DI PASTINACA CON SALVIA FRITTA (PARSNIP PURÉE WITH FRIED SAGE)

SERVES 4

2 pounds parsnips, peeled and cut into thirds

1 cup tightly packed fresh parsley leaves

Salt and freshly ground black pepper

4 tablespoons unsalted butter

Olive oil for frying

Two dozen large fresh sage leaves

Place the parsnips in a large saucepan, cover with salted water and bring to a boil. Lower the heat to medium and cook for 10 to 15 minutes or until tender. Drain.

Place the parsnips and parsley in a food processor and purée. Season with salt and pepper and whip in the butter. Keep warm.

Pour ½ inch of olive oil into a skillet and place over medium heat. When the oil is hot enough, add as many sage leaves as will comfortably fit and fry for 10 to 15 seconds or until just crisp. Remove with tongs and drain on paper towels. Serve over parsnips

For a spicier flavor, purée the parsnips with 2 cloves garlic and ½ of a red chili pepper.
